In the fall/winter I'm obsessed with soup. I love to try new soups, old recipes and sometimes even create my own. Some days I wish I wasn't at work so I could cook soup for my hubby & I, the in laws, my Dad, Grandparents, homeless people and so on....
But I do work so the easier the better because by the time I get home, the last thing I really want to do is cook.
I came across this recipe & was excited to try it. My hubby LOVES Tomato Soup so the Tortellini was just a bonus.
Soup turned out great. Wasn't as creamy as the picture looks so maybe I added a bit to much liquid. It was still pretty good and super easy.
That was the best part! It also made enough for Jake and I to each have one bowl and there was probably enough for an extra two bowls depending on what size soup bowls you use. I'll definitely try this recipe again and maybe try to make it a bit more creamy next time.
Oh I also made homemade cinnamon/honey butter. It was delicious. Recipes are below. I don't have a pic of the butter. Dang it. I'll take one next time.
Tomato-Tortellini Soup
Ingredients
1 package (9 ounces) refrigerated cheese tortellini
2 cans (10-3/4 ounces each) reduced-sodium condensed tomato soup, undiluted
2 cups 2% milk
2 cups half-and-half cream
1/2 cup chopped oil-packed sun-dried tomatoes {I just used canned Italian Style chopped tomatoes}
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried basil
1/2 teaspoon salt
1/2 cup shredded Parmesan cheese
Additional shredded Parmesan cheese, optional
Directions
- Cook tortellini according to package directions.
- Meanwhile, in a large stock pot, combine the soup, broth, milk, cream, tomatoes and seasonings. Heat through, stirring frequently. Drain tortellini; carefully add to soup. Stir in cheese. Sprinkle each serving with additional cheese if desired. Yield: 10 servings (2-1/2 quarts).
Cinnamon/Honey Butter {Calorie free right????}
2 sticks of butter-at room temp.
1 cup of powdered sugar
1 cup of powdered sugar
1 cup honey
2 teaspoons of ground cinnamon {I used a bit more though}
Blend well and there you have it. DELICIOUS cinnamon/honey butter!

I wish I wasn't lactose intolerant because creamy tomato soups are my all time favorite. That looks so good!
